Derry duck and Londonderry potatoes
Duck breasts in an orange glaze with sautéed potatoes and caramelised apples - plus a side of kale to cut through the richness.

- 1 tbsp lemon juice, for acidulated water

- 2 tbsp caster sugar
- 100ml/3½fl oz maple syrup
- 100ml/3½fl oz soy sauce
- 100ml/3½fl oz balsamic vinegar
- 100ml/3½fl oz orange juice
- 400g/14oz new potatoes
- 4 duck
- 200g/7oz curly kale
- 50g/1¾oz unsalted butter
- 50g/1¾oz duck fat
- and freshly ground saltblack pepper
